Twice Baked Potatoes...

...they're not just for company any longer!

Recently, The Husband has been making them for us.

Bake potatoes as normal. Scoop out innards:

chopped shallots
sour cream
salt and pepper
grated cheese (reserve some as a topping)

Mix and re-stuff potato skins.
Sprinkle with paprika.
Add grated cheese topping.
Bake again @ 350 degrees for 20-30 minutes:

Final result:

Serve with rib-eye steak! (and red wine)
That is just one of the reasons why I. LOVE. THE. HUSBAND!
