Mom Update & Comfort Food

Today, 12 days after surgery, the staples in Mom's knee were removed. Her incision is healing nicely. She continues to work hard at rehab, meeting and/or exceeding all the goals set by the doctor and enforced by the physical therapist. Good job, Mom!

The Sister and I are no longer staying at night with her. We are, however, in and out at her house multiple times a day. She still can't cook for herself, so we are either cooking at her house or taking food to her.

This evening I made an old family favorite for her dinner, Ground Beef & Spinach. I served it with tomatoes and cucumbers fresh from the Cherry Street Farmer's Market. She loved it!

Ground Beef & Spinach

The Husband was away recently and I took the opportunity to make one of my Mom's old recipes. She either read it in a magazine or the local newspaper when I was a child. It was an early day "hamburger helper".

The ingredients are one pound of ground beef, one can of spinach, 1/2 of a yellow onion, one egg and salt/pepper.
Dice the onion and heat a tablespoon of olive oil in a pan to saute the onions. Once the onions are soft, add the ground beef and salt/pepper to taste.
Once the ground beef is browned, add the drained spinach to the pan. Stir into the ground beef and onion mixture. Remove excess liquid from the pan. Add the beaten egg to the mixture and mix thoroughly. Allow mixture to simmer until egg is cooked and there is practically no liquid remaining.
The finished product.
I continued the tradition of my Mom's menu and opened a can of corn to go with the main dish.
Oh so yummy and oh, the childhood memories!

Did your mom have something special she did to ground beef to dress it up? Or, is there anything different you use to spice up ground beef?

Update: I spoke to my mom and told her I made this dish and how good it was. She said she read the recipe in a magazine article about Shirley Temple all those years ago. This is a recipe Shirley made for her family. So there you have it..."the rest of the story".

Small Accomplishments

I have a list of small accomplishments from the last couple of days:
  • reorganized the "stuff" under the kitchen sink and in the cabinet above the microwave
  • moved a few of my houseplants to their summer home on the front porch
  • read a lot of recipes in the vintage appliance booklets my Mom gave me
  • learned about potato nails
  • laundry
  • lunch on the porch
I'm sure there are other things I did, but I just can't recollect them at the moment!

What have you been up to the last couple of days?

Fun On A Bun

My Mom brought me a sack of recipes cut out of newspapers by my grandmother as far back as 50+ years ago, as well as those lovely kitchen appliance books you receive when you buy a new counter top grill, electric skillet, blender, etc.

I have been closely reviewing this treasure trove of 1950's, 1960's and 1970's appliance instructions, recipes and images.

I think one of my readers should make the following recipe and report back to the rest of us:

Fun On A Bun
Grind together 1 loaf Spam, 1 small onion, and 1/2 lb. cheddar cheese. Stir in condensed mushroom soup to moisten. Scoop out soft centers of buns. Fill with mixture. Heat, foil-wrapped, in oven or on grill.

Who's going to take on this challenge?
